French Toast Soufflé
Who doesn’t like French toast? Answer – My toddler. I have tried making him French toast for breakfast many times, and every time he scrunched up his nose and refused to eat more than one bite without fail. Well, I am not giving up. French toast is one of those breakfasts that is super easy to make and when you exclude all the sugar involved, could be considered a pretty healthy meal. I will prevail!!!
When my friend posted a delicious-sounding French toast recipe on Facebook, I knew I had to try it. After all, the recipe is from one of the best restaurants in La Jolla, Brockton Villa. One thing that makes this French toast recipe stand out is that you stick it in the oven so it puffs up like a soufflé! How yummy does that sound!
I have modified the original recipe to exclude sugar and the orange flavoring simply for the reason that I do not have them in my pantry and I do not want to buy ingredients just for one recipe. I just did a complete make-over of my pantry lately and discovered that if I purchased an item just to try a particular recipe, I end up not using it for anything else and I always end up throwing it out due to the expiration date. Therefore, I substituted honey for the sugar and added some extra orange juice to make up for the lack of orange flavoring. I also used multi-grain roll instead of French bread. The original recipe calls for one loaf of soft French bread, but I had so much liquid in comparison to bread, so I would say you need either a really long loaf, or you need two loaves. I ended up using one loaf and cut the liquid portion in half since I am not making breakfast for 6 people.
The result? My husband, who hates anything multi-grain and prefers everything unhealthy, said it was good. My toddler… Did not hate it! He at least tried the French toast and ate a slice before he jumped off the chair and ran after the dog. Unfortunately, that’s all us moms with picky toddlers can hope for, right?
